Homemade Gyros

A few weeks ago I shared my vegetarian gyros.  I use to think I didn’t like gyro meat, but today that all changed. After I shared my vegetarian recipe, a reader pointed me in the direction of how they cook and season real authentic gyro meat. Although this recipe isn’t perfectly authentic, it is very good, and easy to make at home.  This recipe is very closely adapted from Alton Brown’s gyro meat recipe. Lamb can be pricey, and if you want to save a little money, you can use half beef or pork and half lamb instead of 100% ground lamb.

Homemade Gyro Recipe

Ingredients

2 lbs ground lamb
1 teaspoon dried oregano
1 teaspoon dried marjoram
1 teaspoon dried rosemary
1 medium onion, diced
1 clove garlic
1 1/2 teaspoons kosher salt
1 teaspoon black pepper

Tzatziki Sauce

1 cucumber, diced very fine
2 cups plain yogurt
1 tablespoon finely chopped fresh mint or dill or both
the juice of 1 lemon
4 cloves garlic, grated
salt to taste

Additional ingredients

sliced cucumber
sliced tomatoes
flat bread

Method

1. Preheat oven to 325 degrees. Place onion and garlic in food processor. Pulse until fine. Remove and place in paper towels and remove as much water as possible. Place ground lamb and spices in food processor. Pulse until it is ground well.

2. Form into a rectangular shaped loaf and place on baking sheet. Bake at 325 degrees for about one hour, or until internal temperature is 170 degrees. Let meat rest at least 15 minutes before cutting.

3. Place all ingredients for tzatziki sauce in a bowl and mix well. Slice meat thin and place in flat bread with sliced cucumber, tomato, tzatziki sauce, salt and pepper.

[...] Homemade Gyros – These were flavorful and so refreshing – a perfect warm-day meal. I used ground pork instead of veal (what can I say? I’m cheap), and I would definitely recommend using Greek yogurt for the tzatziki, as mine was pretty watery. Speaking of which, I added the fresh mint and a whole lot of dried dillweed, plus a little salt, to get the right flavor. It wasn’t worthy of eating straight but with everything else it was delish. These caught my eye & I made this up this week to use as a dinner later in the week. These don’t taste just like the gyros I get at my local Greek Diner – but they are a tasty at-home alternative, THANKS

Cheat on the tzatziki sauce and use sour cream! My favorite Greek restaurant does :)
