French fries made from scratch are infinitely better than those from the drive-thru, especially when you use sweet potatoes and bake them in the oven. People are often confused about the difference between yams and sweet potatoes – the larger, rounder, darker-fleshed variety of sweet potato are very often mislabeled as yams in grocery stores, when they are just a different variety of sweet potato. Choose them over the longer, thinner, paler-fleshed sweet potato, which will work fine but don’t contain as much beta carotene.

You don’t really need a recipe per se to make sweet potato fries, but a few tips will help:

How to Make Oven Baked Sweet Potato Fries

1) slice your sweet potato, peeled or not (the peel contains much of the vitamins and fiber), into sticks, wedges, or quarters, then slices – ensure they are relatively even, so that they cook evenly. In a bowl, toss them with a drizzle of canola or other mild vegetable oil.

2) drizzle some of the oil onto a heavy rimmed cookie sheet and put it in the oven. Turn the oven on to 450F.

3) when the oven is hot, take the pan out and carefully spread out the sweet potatoes on it – the combination of hot pan and hot oil will keep the fries from sticking. Make sure that the pan isn’t too crowded, or they will steam instead of browning properly.

4) bake them for 20 minutes or so (depending on the thickness of the fries and how hot your oven is), stirring once or twice, until golden. Sprinkle with coarse salt and serve immediately.

My 10-month-old loves these. Along with the vegetable oil, I toss in a sprinkle of cumin or mild chili powder. I leave the peels on, for added nutrition and because I’m too lazy to peel them!
