Black Bean and Beef Nachos
Whether you eat them as an appetizer, for lunch, for a quick and easy dinner or as the star of a Cinco de Mayo party, nachos are always a crowd-pleaser. You can top them with just about anything you’d like, making the possibilities limitless. One of our favorite versions is to use our leftover TURKEY TACO meat, add cheese and turn them into nachos. Stretching one meal into two! Black beans and beef are another of our favorite nachos and you can whip them up in no time flat.
Black Bean and Beef Nachos
What you’ll need:
1 onion – minced
1 green bell pepper – seeded and minced
1 pound ground hamburger meat
salt/pepper
1 tablespoon chili powder
1/2 cup salsa
1/2 cup black beans – drained
tortilla chips
1 cup Mexican cheese blend
What to do:
1. Into a deep-sided pan, add onion, bell pepper, hamburger meat, and cook over medium-high heat until done.
2. Season with salt and pepper. Add salsa, chili powder. Stir to combine. Continue cooking additional 3-5 minutes.
3. Add black beans. Stir to combine.
4. Turn broiler on LOW. Arrange tortilla chips on an oven-proof dish/serving platter. Top with meat mixture. Sprinkle cheese on top. Place into the oven and cook just until cheese melts {approximately 1-2 minutes}
Optional: Garnish with sour cream, jalapeno slices, guacamole, cilantro, salsa, additional cheese etc.
