Power Noodles

While hosting a Korean exchange student last year, my children were utterly taken in by what he ate for breakfast. Noodles.
It wasn’t long before my entire tribe of kids was calling for Noodles for breakfast, too. Any why not? They are warm, hearty, and kid-palate friendly. Whether it be breakfast, lunch or dinner, I’ll bet your kids will love this basic bowl of noodles as much as mine do.

Basic Bowl:
1 t. sesame oil
2 T. soy sauce
2 T. brown sugar
pinch of fresh ginger, grated
1 (6 oz. package) Chow Mein Stir-Fry Noodles
1 T. olive oil

Power Bowl:
(pick and choose your favorite ingredients)
1 egg, well beaten
1/2 tsp. sesame seeds
1/4 c. peas
1/4 c. carrots, grated
1/4 c. mushrooms, sliced
1/4 c. cabbage, shredded
1/4 c. bean sprouts
1/4 c. scallions, chopped
2 T. peanuts, chopped
2 T. cilantro, chopped
1/4 c. ham, diced
1/2 c. boiled chicken, shredded
1/2 c. shrimp, cooked

Instructions
In a small bowl, combine sesame oil, soy sauce, brown sugar, and ginger. Set aside.

Fill a medium pot with water, bring to boiling. Add chow mein noodles and boil for 3 minutes. Dump into a strainer, and shake noodles as dry as possible.

In a small skillet, heat olive oil over medium heat. Add any “Power Bowl” ingredients you desire and saute for 2 minutes. Add cooked noodles.

Pour soy sauce mixture over. Saute 1 minute more. Serve immediately.

Those noodles look gorgeous as well as the photo. The addition of brown sugar is a nice addition.

P.S. I heard and read that crossing your chopsticks is considered bad luck in most Asian cultures? There’s a whole list of chopstick etiquette tips out there on the internet LOL!! Quite interesting.
