Lemon Bars
Lemons are everywhere right now and I couldn’t be happier because there are just so many things to make with them. I’ve already shared my LEMON CURD, and LEMON GELATO recipes with you and now it’s time for Lemon Bars. You just can’t be unhappy around a lemon bar. They’re so bright, creamy, and just all around happy. Not to mention, they’re easy as pie to whip up from scratch. The fresh lemon juice really shines through. They’re the perfect mixture of sweet and tart. And to me, the longer they chill in the fridge the better they are. Well that is, if you can wait that long ; )
Lemon Bars
What you’ll need:
1 1/2 cups all purpose flour
1/2 cup powdered sugar
3/4 cup COLD butter – cubed
4 fresh eggs – beaten
1 1/2 cups sugar
1 teaspoon baking powder
1/2 cup fresh lemon juice
3 tablespoons all purpose flour
What to do:
1. Preheat oven to 350 degrees.
2. Into food processor add: 1 1/2 cups flour, powdered sugar and margarine. Pulse until mixture is crumbly. Transfer mixture to a 9 x 13 oven proof dish that has been sprayed with cooking spray. Firmly press mixture into bottom of dish forming crust. Bake for approximately 15 minutes.
3. WHILE crust is baking, into a large bowl add: eggs, sugar, baking powder, lemon juice and 3 tablespoons flour. Whisk together until smooth. Pour mixture into crust. Return to oven and bake for approximately 2o-25 minutes.
4. Allow bars to cool. Garnish with additional powdered sugar if desired. Store leftover bars, covered in refrigerator.
