Homemade Pepperoni Pizza Hot Pockets
Once I learned how to make hand pies and homemade pop tarts I was off and running. I mean, why not make savory foods too, right?! My daughter is always a fan of pizza but I refuse to buy her the frozen version from the grocery store. Instead I usually make it fresh at home using a ball of pizza crust I buy at the store. Last week I decided to get thrifty and try make homemade hot pockets using pie crust like I do for pop tarts. I know it isn’t quite the same as pizza crust (which would make it more like a calzone), but I didn’t mind. I couldn’t wait to experiment. First I loaded up a pie crust rectangle with cheese, sauce and pepperoni then sealed it all in with the tines of my fork. Then I baked it quickly and broke it open to taste the results. Voila – a hot pocket made with pie crust. My daughter was thrilled with the results as was I. Looks like I know what I’ll be making again next week!
Pepperoni Pizza Hot Pockets
1 premade pie crust, thawed and rolled flat
1/2 cup pepperoni slices
1/2 cup pizza sauce
1/2 cup shredded mozzarella cheese
1. Preheat the oven to 400ºF.
2. Transfer the pie crusts to a lightly floured surface and cut it into 2×3 rectangles. It is easiest to measure the pieces with a ruler, score the crust with a knife and cut it with a pizza cutter.
3. Spoon about 2 teaspoons of pizza sauce followed by 2 to 3 pepperoni and a large pinch of mozzarella onto one of the rectangles, leaving about 1/4 inch of space before the edge. Use a cookie cutter or paring knife to cut out fun shapes in the second rectangle. Then place the cut out rectangle over the jam and seal the edges together with the tines of a fork. Baking on a cookie sheet for 8 to 10 minutes, then allow to cool.
