Gluten Free Diets are more common nowadays than ever before. If you aren’t familiar with what a gluten free diet is: Here is what wikipedia says:

A gluten-free diet is a diet completely free of gluten. Gluten is a protein found in wheat (including kamut and spelt), barley, rye, malts and triticale. It is used as a food additive in the form of a flavoring, stabilizing or thickening agent, often hidden under “dextrin”. A gluten-free diet is the only medically accepted treatment for celiac disease,[1] the related condition dermatitis herpetiformis,[2] and wheat allergy.[1]
Good news though, being gluten free doesn’t mean you have to to eat bland foods. Quite the contrary as I have learned first hand this past year. Our middle son is gluten intolerant. We have had to change the way he eats and he is much better for it. I’m still learning more and more everyday and that includes learning how to prepare foods that are gluten free but yet still taste like the “gluten” food my son was used to having.

The flour-less peanut butter and Nutella Cookies pictured above are one of his favorite treats. You can find the recipe HERE.

There are literally hundreds of gluten free websites around the blogosphere, Some of of my favorite websites for gluten free recipes are:

Celiac Teen

I agree. I love baking gluten free – actually prefer a lot of the GF flours.

I have found some really great recipes that do not use gluten – and they are not only healthy but taste great! One thing we like to eat is Kamut which their website says that many people sensitive to gluten can tolerate it but that it’s not recommended for those with Celiac disease. Just thought this might help anyone who is slightly sensitive to it or prefers gluten free – they have recipes on their site that look good!
