Oreo Chunk Cookies

They inspired me to look beyond chocolate chips while making a batch of cookies recently – instead I chopped a half sleeve of Oreos and stirred it into the dough – the rubbly chunks added chocolate flavor as well as crunch. The best of two worlds, colliding in my oven.

You could, of course, use a chocolate drop cookie dough instead of the traditional brown sugar one that’s the norm for chocolate chip cookies. Use your imagination!

Oreo Chunk Cookies

1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup sugar
1 large egg
1 tsp. vanilla
1 1/4 cups all-purpose flour
1/2 tsp. baking soda
pinch salt
about 1/2 sleeve of Oreos, coarsely chopped

Preheat oven to 350˚F.

In a large bowl, beat the butter and sugars until well blended and starting to get fluffy. Add the eggs and vanilla and beat again. Add the flour, baking soda and salt and beat or stir just until blended.

Stir in the chopped Oreos and drop in spoonfuls onto an ungreased baking sheet, allowing 2 inches between them. Bake for 12-14 minutes, until golden around the edges. Let cool on the sheet for at least 10 minutes before transferring to a wire rack to cool completely. Makes about 1 dozen cookies.
