Easy Lemon Garlic Tilapia
If you’re trying to get more omega-3s into your diet, tilapia is a fantastic choice for a quick and easy meal. This low-mercury fish is available year round, and it is also Sam’s Club fish of the month.
Often overlooked for the flashier salmon or the more exotic saltwater seafood varieties, tilapia can be a healthy and sustainable choice for the dinner table. Take the time to educate yourself on the facts, and pick up this time-friendly meal for yourself.
Zesty Lemon Garlic Tilapia
Delicate tilapia is the perfect foundation for a zesty blend of seasonings. This quick, easy dish takes 5 minutes to prepare. While it bakes, the rest of your meal comes together to have a healthy supper on the table in just about half an hour.
1 lemon, zested and juiced
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon salt
1 clove granulated garlic
1 teaspoon minced onion
½ teaspoon dried dill or basil
2 tablespoons canola oil
4 (4-oz.) tilapia fillets
Preheat oven to 400° F. Combine zest, pepper, paprika, salt, minced garlic, onion, basil and oil in a bowl. Mix until a paste forms. Drizzle the lemon juice over the tilapia filets and then rub the herb and spice mixture over them. Place fillets on a parchment-lined baking sheet and bake at 400° F for 7-8 minutes or until fillets are cooked through. Serve over rice and steamed vegetables for a quick and easy meal that will have you sitting around the dinner table after a busy day in no time at all.
