Dairy-free Homemade Nutella

Dairy free nutella spoon 1024x730 Dairy free Homemade NutellaIt seems there are a great many people out there who are fans of Nutella, and almost as many who are interested in making their own, from scratch. Yes, the first two ingredients on the nutrition label of a jar of Nutella are sugar and modified palm oil. Which is why I went about making my own – the creamy blend of toasted hazelnuts and chocolate is just too good to not eat at all. I posted a recipe for it, made with milk and chocolate, but had many requests for a dairy-free version.

Looking back into my archives, the batch I made for a story on nut butters years ago contains just hazelnuts, honey or sugar, cocoa powder and a drizzle of canola oil. Hazelnuts make a particularly dry butter; adding a drizzle of heart-healthy oil as it needs it helps achieve a spreadable consistency.

Dairy-free Homemade Nutella

2 cups hazelnuts
1-2 tsp. canola oil
1/4 cup cocoa
1/3 cup honey

Preheat the oven to 400°F.

Spread the hazelnuts out on a large rimmed baking sheet and roast for 10-15 minutes, shaking the pan once or twice, until the skins break and the nuts look pale golden. Pour the nuts from the sheet onto a clean tea towel and let cool.

Once cooled, rub the nuts in the tea towel to loosen their skins. (Don’t worry about getting every bit of them off.) Put the nuts into the bowl of a food processor and discard the skins left over in the towel.

Pulse the hazelnuts until they are completely ground. Let the machine run, adding about a teaspoon of canola oil, for 2-3 minutes or until it turns into a thick paste. Add the cocoa, honey and another teaspoon of canola oil and blend for another minute, until it becomes spreadable.

Store in a jar or sealed container in the fridge for up to 2 weeks.

Makes about 1 1/2 cups.

If I were to add almond milk and semi-sweet chocolate chips would I decrease the cocoa and honey amounts and eliminate the oil? I’m very excited to try this out!

I don’t know what happened…mine turned out unspreadable and looks nothing like your :( I dont know what i did wrong…any suggestions? My son loved Nutella and so do I but I cannot have Dairy.

Mine looked nice in the food processor, but ended up separating and being very gritty and unspreadable. It looked nothing like the picture, even though I followed the directions exactly.
