Stuffed cookies are all the rage. I’ve seen them all over the blogosphere and I held off for as long as I could before trying them myself {which wasn’t long ; )} I took my family’s chocolate chip recipe and went with a classic to stuff with. Reeses Peanut Butter Cups. Chocolate and Peanut Butter are an obvious combination and these didn’t disappoint.

These make 12 very LARGE cookies. I ended up halving these cookies and half was plenty with a nice big glass of milk. I already have SEVERAL ideas for stuffing the next bunch with!

Chocolate Chip Cookies Stuffed w/Reeses Peanut Butter Cups
What you’ll need: {makes 12 LARGE cookies}
2 1/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
2 sticks real unsalted butter – softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1.5 teaspoons PURE vanilla extract
2 large eggs – room temperature
1 cup semi sweet chocolate chip morsels
12 Reeses Peanut Butter Cups – wrappers removed

What to do:
1. Preheat oven to 375 degrees

2. Add flour, baking soda and salt into a bowl. Mix together with whisk. Set aside.

3. In your mixer beat butter until creamy and fluffy. Add sugar, vanilla extract. Mix well. Add eggs, one at a time, mix well. Gradually add flour mixture. Mix well. Fold in chocolate chips with a spatula.

4. Place your silpat (or silicone) mat onto a rimmed cookie sheet. Spoon your cookie dough onto Reeses Peanut Butter Cup. Place another spoonful underneath peanut butter cup. Place enough cookie dough around to seal. Place onto silpat. Continue assembling. You will need to leave a few inches of space between each cookie to allow for spreading. I baked two cookie sheets with 6 cookies per sheet.

5. Bake for approximately 10-14 minutes Take cookies off of pan immediately and place onto wire rack to cool down.

Ever wonder about all the free stuff you see on the web? It appears like everybody wants to give stuff away for nothing, nada, zilch. But are these items truly free of charge? If so, how can these companies afford to give away all of these coupons and samples? It’s truly all about you, the consumer. We live in a very competitive world marketplace place. The internet has upped the ante in terms of who could be seen and heard via all with the mass media. Now companies need to make lots of noise and this is one way that can do it. I actually just made these a few weeks ago with the mini peanut butter cups. This made it easier to make smaller, average size cookies. Delish!
