Oreo Mint Brownies

With St. Patty’s Day on the horizon, I was thinking it was ’bout time to whip out the old Mint Brownie recipe.  I lurve mint brownies, but making them at home can be a long, arduous task.  First there’s the brownie baking from scratch.  Then there’s frosting to be whipping and dyed, and a chocolate topping to be gently spread over it all.  There had to be an easier way to get my mint brownie fix.  So, when I spied the Mint Oreo’s in the cookie aisle this morning, I was like “booyeah. it’s a sign.”  And sure enough it was.  It was  a sign that I was about twenty minutes away from serious yum.  The combination of  rich brownie batter combined with a secret layer of Oreo Crunch and mint creme is so good, you’ll want every day to be St. Patrick’s Day.

1/2 cup vegetable oil
1 cups sugar
1 teaspoon vanilla
2 eggs
½ teaspoon baking powder
1/3 cup cocoa powder
1/4 teaspoon salt
1/2 cup flour
12 Mint Oreo’s
1/2 cup mini chocolate chips
In a large bowl, beat together the oil, sugar, vanilla, eggs, baking powder, cocoa powder, salt, and flour until well mixed.  Spray a 9×9 baking dish with nonstick cooking spray. Line the bottom of the baking dish with Oreo’s.  Spread the batter on top of the Oreo’s, then sprinkle with mini chocolate chips.  Bake in an oven preheated to 350 degrees for 28-30  minutes, or until the brownies spring back when touched lightly with your finger. Cool completely before cutting and serving.  Enjoy!

I made these but there wasn’t nearly enough batter to cover the pan, so I doubled that portion of the recipe. Other than that, they were fantastic.
