Cat in the Hat Pops for Dr. Seuss’s Birthday

I grew up with Dr. Seuss rhymes and riddles, learning how to read with Green Eggs and Ham and Sam I Am and my kids are too. Just yesterday my four-year-old sat on the couch reading Sam I Am’s pleas to my two-year-old.

I’m sure you have a favorite Dr. Seuss book, but it’s hard to deny the success of The Cat in the Hat. From spin-off series to Hollywood movies, the hat-topped cat has been filling the homes of youth since its appearance in 1957.

So, to celebrate Dr. Seuss’s birthday in 2011, here are a few easy marshmallow pops for your own Thing 1 and Thing 2 as they run up and down on this cold, cold wet day that were inspired by Katie’s.

1/2 cup white chocolate melts
1/4 cup red candy melts
12 jumbo marshmallows
12 sticks

Line a baking sheet with parchment. Melt white chips over a double boiler. Drop spoonfuls into round puddles on the parchment and allow to set.

Melt red candy melts. Take jumbo marshmallows and dip one end into the red candy melts and up the sides about 1/4″. Place on parchment and allow to set.

Carefully place sticks in white disks and then arrange in a piece of foam to hold them up. Dip opposite side of the marshmallow into the red candy melts and scrape the bottom lightly to remove any excess melted red candy. Place the marshmallow with the newly dipped side onto the white disk and stick. Hold for a moment to ensure it’s secure and then allow to dry completely.

Makes 12 Cat in the Hat marshmallow pops.

what exactly ARE the white discs? they aren’t listed in the ingredients

They are white chocolate melts that are just melted, poured onto a sheet and cooled. First ingredient ;)

I am an art teacher and this is a great idea when celebrating Dr. Seuss’s Birthday at school! Maybe I could dc this with my 2nd grade art classes or share this idea with homeroom teachers who could make this and home and bring in for their students to eat!

How do you keep the red chocolate so even and neat, when I tried this my stripes were very uneven. Is there a trick I could try?

Theseare adorable! I would like to make them for my son’s birthday. Do you wait for the white chocalate to completely harden before insterting the stick? It would seem the hat brim would break. Or, do you insert it while it’s soft then place in styrofoam?

I just carefully pushed the stick into the candy disc. They were warm, but not melted, and so it was easy to twist it in. Hope that helps!
