Celebrate Spring Early with Chicken Spring Rolls

When I called her to find out when I should bring them over, she told me that she was having spring rolls for lunch, and to come on over.

I love her spring rolls. Especially the peanut sauce she serves with them. It has the perfect balance of flavors. Together, they make an extremely healthy, extremely satisfying lunch.

Chicken Spring Rolls

spring roll wrappers
cooked chicken strips
fresh cilantro, chopped
fresh mint, chopped
fresh basil, chopped
bean sprouts
bean threads, soaked in warm water for 10 minutes
shredded carrots

1. Fill a nine in pie plate with hot tap water. Soak wrappers, 1 at a time, for about 10-15 seconds to soften. Arrange some of each of the ingredients on the wrapper, and roll up tightly. Repeat with remaining ingredients.

Peanut Sauce

Thanks to my friend Shannon, who shared her recipe with me

3/4 cup creamy peanut butter
1 clove minced garlic
4 tablespoons sugar
1/3 cup soy sauce
1/3 cup rice vinegar
1 1/2 teaspoons chili oil
1 teaspoon fresh lime juice

Whisk all ingredients together and serve with spring rolls.
