At our house we like to grill up a simple strip steak with a touch of salt and pepper, top it with a dollop of Gorgonzola sauce and enjoy our meal. It’s like eating a cozy bistro meal in the comfort of our own kitchen. The entire steak cooking procedure is very straightforward and does not require any marinades or complicated techniques. Dinner is on the table in 20 minutes flat. The great about this is that, despite it’s simplicity, the steaks comes out perfectly every time. They are a perfectly tender medium rare, our preferred style, with a cool creamy cheese sauce to contrast the piping hot meat. The sauce is rich for sure, a little goes a long way. If you have any leftover drizzle it over an iceburg wedge and sprinkle it with bacon for dinner the following evening!

Weeknight Bistro Steak with Gorgonzola Sauce

14 ounces Sirloin Strip Steak (1 1/2” thick)

4 tablespoons Worcestershire sauce

Salt & Pepper

For the Sauce:

2 tablespoons Gorgonzola, crumbled

1/3 cup mayonnaise

¼ cup sour cream

1 tablespoon heavy cream

1. For the Steak: Sprinkle both sides of the steak liberally with salt, pepper and Worcestershire sauce. Place stovetop grill pan over high heat. Sear steaks 5 minutes per side, then repeat steps to achieve criss-cross grill marks. *This will cook the steak to medium done. If you’d like your steak more well done, or more rare, adjust cooking time accordingly.* Remove steak from heat and allow to rest for 5 minutes. Slice, drizzle with Gorgonzola Sauce (directions below) and serve.

2. For the Sauce: combine Gorgonzola, mayonnaise, sour cream and heavy cream in a small bowl. Whisk together with a fork until completely combined. If the mixture is too thin add a little more cream by the teaspoonful until you reach desired consistency.
