Heart Shaped Peppermint Patties
One of the rules I have for myself in my kitchen is that I never buy any kitchen tool that is purely a unitasker. Therefore, I had to find another creative use for the linzer heart-shaped cookie cutter that I bought a few days ago. Yesterday I made heart-shaped raspberry jam filled linzer cookies. It was obvious that I could make any number of heart-shaped cookies or wafers, but I also wanted to make use of the smaller cookie cutters used to make the cut out shape in the linzer cookie. That’s when I thought of taking peppermint patties and using the Valentine’s Day themed little cookie cutters on them.
I used a simple recipe to make the peppermint filling, and then rolled it out in a gallon-sized plastic bag. I froze the filling well before cutting out my shapes and dipping them in chocolate. Freezing the filling first helps your dough to hold its shape in the hot chocolate. I used almond bark chocolate to coat these, but they would have also been really delicious with dark chocolate.
Heart Shaped Peppermint Patties Recipe
Ingredients
1 lb powdered sugar
3 tablespoons melted butter
3 tablespoons water
2 tablespoons corn syrup
1/4 teaspoon peppermint extract
melted almond bark chocolate or dark chocolate for coating
Method
1. Combine powdered sugar, corn syrup, water, melted butter and peppermint extract in stand mixer. Mix on low until it starts to come together. Mixture should come together by forming large separate balls of candy filling. Scrape down sides of bowl to make sure everything is mixed well. Place dough in a gallon storage bag and roll the dough into a square shape the same width of the bag. Place in freezer for about 1 hour.
2. Melt chocolate in microwave according to package directions. Use cookie cutters to cut out heart or round shapes. Dip cut-out dough in chocolate and place on parchment paper to cool and harden.
