Crazy Good Cheese-Swirled Mashed Potatoes
A friend once told me that she could survive her entire life if the only thing she ever at was mashed potatoes. Dang straight, I said. Then I spat in the palm of my hand and swore we’d be friends forever, because anyone who loves mashed potatoes as much as I do deserved my undying loyalty. These Cheesy Mashed Potatoes take the perfect of soft, whippy mashed potatoes and elevated them beyond perfection. Chock full of flavor, butter, and cheese, this simple recipe is to mashed potatoes was Lady Gaga is to your average pop star. Brilliant, bold, and a little off the hiz-ook.
Easy Cheesy Mashed Potatoes
5-6 potatoes
1 cup vegetable or chicken broth
3 slices American cheese
1 tsp. onion powder
1/2 c. sharp cheddar cheese, grated
2 T. diced scallions
Salt & Pepper to taste
Instructions
Begin boiling water in a large pot with a little bit of salt added to the water. While you are waiting for the water to boil, peel potatoes, dice extremely small, then add them to the pot as soon as the water is boiling. Boil for 15-20 minutes, or just until the potatoes are soft and tender enough to mash.
Drain water from the pot, transfer the hot potatoes into a bowl and immediately add 1/2 cup of broth, onion powder, and the American cheese. Add salt and pepper to taste
Using an electric beater, mix the potatoes together until light and fluffy, adding more broth if needed to achieve the perfect mashed potato consistency.
Fold in the sharp cheddar and scallions. Serve immediately and enjoy!
