Devils Food Valentine’s Day Cake Pops
You know it wouldn’t be a holiday around here without some festive cake pops to mark the occasion. Cake pops have become the new cupcake, sweeping the nation with their fun look and decadent taste. We owe this new fad to Angie Dudley (aka Bakerella) who parlayed the creative, whimsical creations on her website into a wonderful cookbook. I personally like cake pops because they are the perfect size to satisfy my sweets cravings. They are two bites of rich chocolate perfection, just the right amount of chocolate without overdoing it. Even my daughter is in on the fun now; she always asks for the “cake lollipops” anytime I ask her what she’d like for dessert! To celebrate Valentine’s Day I decided to make our cake pops with a rich Devil’s Food cake mix and dip them in melted white chocolate. Then I sprinkled them with some pretty sanding sugar for a fun festive touch.
Valentine’s Day Cake Pops
1 Devil’s food cake (13×9 size), crumbled
1 cup cream cheese frosting (homemade or store bought)
1 12 ounce bag white chocolate chips
lollipop sticks
Sprinkles or sanding sugar for decorating
1. Place the cake crumbs in a large bowl with 1/2 cup of the frosting. Start mixing the frosting and crumbs together, adding more frosting one tablespoon at a time, until you achieve the consistency of a playdoh.
2. Use clean hands to roll the crumb mixture in your hands to form 2 inch balls, cubes, or desired shapes. Insert a lollipop stick or popsicle stick and refrigerate the pops while you melt the chocolate in the microwave.
3. One the chocolate is a smooth consistency dip the chilled cake balls in it until totally covered. Then decorate with sanding sugar or sprinkles and place on a plate lined with wax paper. Place the plate in the refrigerator and chill until the chocolate is totally set.
