Homemade Girl Scout Cookies: Do-Si-Dos, the Ultimate Peanut Butter Sandwiches
I love Girl Scout Cookies. There. I said it. As a girl I used to sell them. Then my sister sold them. Then my youngest sister sold them. Cousins sold them. I ate them. And the world was good.
Recently I made peanut butter cookies, and because I was using them for several different projects, I made several different sizes. One of those smaller sizes was intended for peanut butter and jelly sandwiches, which they became, but then I had the crazy idea to recreate one of my favorite Girl Scout Cookies, the Do-Si-Dos.
Just a bit of peanut butter and powdered sugar mixed together for extra sweetness and you have your very own peanut butter sandwich cookies. It’s like having a Girl Scout at your door every day!
Do-Si-Dos: Peanut Butter Sandwich Cookies the Girl Scout Way
1 batch of your favorite peanut butter cookie dough
1/2 cup peanut butter
1/2 cup powdered sugar
Roll peanut butter cookie dough into 1/2″ balls. Place on lined baking sheet and press down lightly. Bake as directed. Remove from oven and allow to cool completely in the open air on the cookie sheet so they crisp up just a bit.
Blend together peanut butter and powdered sugar until creamy. Place a small amount on the back of one cookie and sandwich with another. Repeat until all cookies are done.
