Loaded Nacho Dip

This is my favorite game day treat. We love nachos, but when we have a party or get-together, I never make traditional nachos, because everyone just snacks a little here and there, and the nachos always get soggy. I don’t know about you, but I just can’t stand soggy nachos. Yuck! That’s why I just put all the yummy nacho fixings together as a dip. This way, everyone can just nibble throughout the game, without feeling pressured to hurry up and finish the nachos before sogginess sets in.
This is a layered dip, but because there are so many layers, 10 to be exact, we’re just going to call it a loaded nacho dip instead of a 10 layer dip. I started the dip with re-fried beans, then ground beef and homemade cheese sauce. Then I added all the other typical nacho toppings: lettuce, tomato, onion, fresh cilantro, olives, guacamole and sour cream. This makes enough to feed a crowd and would be perfect to make for any game day or get-together.
Loaded Nacho Dip Recipe
Ingredients
Beans
1 can re-fried beans
1 teaspoon cumin
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 teaspoon chili powder
Beef
1 lb ground beef
1/2 medium onion, chopped
1 clove garlic, chopped
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon dried cilantro
salt and pepper to taste
olive oil
Cheese Sauce
2 tablespoons butter
2 tablespoons flour
2 cups milk
2 cups cheddar cheese, finely shredded
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Next Layers
2 cups shredded lettuce
1 cup chopped tomato
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
1/2 cup sliced black olives
Guacamole
4 avocados
the juice of 1 lime
1 clove finely chopped garlic
2 tablespoons freshly chopped cilantro
Last Layer
1/2 cup fresh sour cream
Method
1. Combine first five ingredients in a bowl and mix well. Then spread the beans in a casserole dish.
2. Preheat a large skillet. Drizzle with olive oil and add ground beef, onions and garlic from the next list of 8 ingredients. Add cumin, oregano, cilantro, salt and pepper. Brown beef and add it as the next layer of the dip.
3. In a clean skillet, melt butter. Add flour and whisk to make a roux. Add salt, garlic powder, onion powder and paprika. Cook for 2 – 3 minutes over medium heat until it smells nutty. Add milk and turn heat to high, stirring constantly until it boils. Then reduce to a simmer. Simmer for a few minutes and then remove from heat. Add cheese and whisk until it is all melted. Do not place back on heat again. Pour cheese sauce over beef.
4. Layer the next five ingredients in your casserole dish: lettuce, tomato, red onion, fresh cilantro, and black olives.
5. For the guacamole, add the next ingredients to a large bowl: avocados, the juice of 1 lime, 1 clove chopped garlic, and freshly chopped cilantro. Mash with a fork until well combined. Spoon guacamole over dip. Finish by adding sour cream on top. Serve with tortilla chips and enjoy!

(= and this is a MUST at every get together.. Friends tell me they won’t let me in the door withOUT it.. lol.. I’ve started mixing the cheese, beans, and meat… The Guac and sour cream, and shedding the lettuce and adding it to fresh home made Pico de Gallo.. because I find TOO many layers was making it toooo think and folks weren’t getting through them all.. lol.. NOW you’ve made me hungry.. lol
