Blank Canvas: Peanut Butter Cookies

peanut butter cookies 200x300 Blank Canvas: Peanut Butter Cookies Sometimes I forget about peanut butter cookies. I mean, with all the chocolate chip cookie wars going on, the stuffing of Nutella into everything and the focus on cupcakes, peanut butter cookies are oft left in the corner.

However, a tried and true peanut butter cookie recipe is a world of endless possibilities, a blank slate, you may say, for the kitchen artist to create and mold as they see fit. I mean, one of my favorite classic cookies, the peanut butter blossom, starts with just a simple peanut butter cookie dough recipe and a Kiss.

So, whip up a batch of peanut butter cookies as an after-school snack or Kiss them a few times and make them extra special. Don’t leave these cookies in the corner. They deserve front and center stage. (Allergic? Try an almond butter cookie instead!)

These peanut butter cookies are the type that have just a slightly crisp exterior and completely chewy interior because that’s the way I like them. Simple and understated. Perfect with a glass of milk to wash them down.

Peanut Butter Cookies

1 cup unsalted butter, softened
1 cup granulated sugar
1 cup firmly packed light brown sugar
1 1/2 cups creamy peanut butter
2 eggs
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
extra sugar for rolling

Preheat oven to 350 degrees F. Beat together butter, sugar, peanut butter and brown sugar until light and fluffy. Beat in eggs and vanilla. Whisk together flour, baking soda, baking powder and salt. Add to the peanut butter and mix together, scraping sides.

Form dough into quarter-sized balls. Roll in sugar and place on parchment-lined baking sheets. Bake at 350 degrees F for 11-13 minutes. Remove from oven and allow to sit for 5 minutes before removing from cookie sheets.

Store in airtight containers. Makes a lot of cookies. A lot. Which is a good thing because you can do a lot with peanut butter cookie dough. In fact, why don’t you just bake up half, and refrigerate the other half of the dough for later? I have a few things up my sleeve when it comes to peanut butter cookies.

These are very good.I like that they are very peanut buttery and I had to put chocolate chips in them to make them more decadent! Yummy!

These cookies are God-like. SO GOOD. I almost don’t want to bake the dough, but sit here and eat it. I know the cookies will be even better so I’m going to. I’m glad I cam upon this recipe.
