Peanut Butter Bars: The Ultimate Chocolate & Peanut Butter Treat

Post PB Squares1 300x295 Peanut Butter Bars: The Ultimate Chocolate & Peanut Butter TreatWhat is it about peanut butter and chocolate that makes me want to toss on a bathing suit and swim in it?  Good heck.  Creamy, salt-kissed peanut butter and creamy, sugar-kissed chocolate are a better duo than Donny & Marie, and you can quote me on that.

This simple cookie bar takes the classic chocolate & peanut butter combo to a whole new level of bliss.  Not only are they ridiculously simple to make, but these Peanut Butter Bars have a crisp-chewy peanut butter chocolate chip cookie crust, a heaping layer of smooth peanut butter and a thick plop of homemade buttercream on top.  Did I mention chocolate drizzle on top of that?  Heck ya.  There’s some drizzle, too.  Which pretty much makes these the most incredible dessert bars ever.  Grab yourself a fork and dive on in.

  • 1 pkg. Betty Crocker Peanut Butter Cookie Mix
  • 1 egg
  • 2 tablespoons butter
  • 1 cup semi-sweet chocolate chunks
  • 1 cup smooth peanut butter
  • 1 pound powdered sugar
  • 1 stick butter
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla
  • 2-4 tablespoons milk
  • *
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons butter

In a medium bowl, mix together the cooke mix, egg, and butter.  Press into the bottom of an 8×10″ pan.  Bake in an oven preheated to 400 degrees for 15-17 minutes, just until set.  Remove from the oven, and drop spoonfuls of peanut butter on the hot bars.  Allow the peanut butter to melt slightly before carefully spreading it over the cookie base with a spatula. Cool completely.

In an electric mixer, beat together the butter, powdered sugar, cocoa, vanilla, and milk until light and fluffy (add just enough milk to make the frosting fluffy, soft and spreadable, without being wet and runny).

Frost the cooled cookie bars with the frosting.

In a small, microwave-safe bowl, microwave the chocolate chips and butter together.  Mix together until smooth.  Transfer to a ziploc bag.  Snip off the edge of the bag and drizzle the chocolate over the chocolate frosting.

Hi there,
Your recipe looks great. When I was reviewing the recipe, I see that you call for 1 cup semi-sweet chocolate chunks and I can’t find where you use them in your recipe. I see the 1/2 c chocolate chips is used for the drizzle on the top. Am I missing something. Do I add the chocolate chunks to the peanut butter cookie dough batter in the first step? Would you please e-mail me back? I know my kids and husband will LOVE these…I just want to make them the right way!!!

Looks like you add the 1 cup of chips to the cookie dough and use the 1/2 cup to make the chocolate drizzle.

I cannot find an 8×10″ pan. Can I use an 11″ by 13″ and if so, do I double the recipe? Please email me. Thanks

I had my dough already pressed in the pan & in the oven when I noticed the choc chunks in the recipe. I’m going ahead w/out them in the dough & might sprinkle a few on the top of the peanut butter. I’m sure even if omitted, this cookie w/be awesome. Yummy!!
