Forget Girl Scout Cookies: Quinoa Salad with Pumpkin Seeds, Apples & Goji Berries
Now, put down those girl scout cookies and the 17 day diet book, and make something that will fill your body and mind with lots of juicy nutrients that just want to keep you strong and healthy. Come on, I promise this will fill you with joy, and as a bonus, a side order of ‘no regrets.’
Quinoa is a complete protein and is packed with fiber, magnesium, manganese and copper. Besides being juicy, apples are full of antioxidants and fiber and have you heard of goji berries? Oh, pretty goji berries are super high in antioxidants and full of essential minerals and amino acids.
The first time I served this salad it was with a Honey-Curry Vinaigrette.
Quinoa, Apple & Goji Berry Salad with Honey-Curry Vinaigrette
Ingredients (Serves 4)
1 cup cooked quinoa
1/4 cup raw pepitas (pumpkin seeds)
1/4 cup goji berries (or dried cranberries)
1 small apple (Macintosh or golden delicious), cut into 1/8-inch-thick wedges
1/4 cup lettuce leaves of choice
Directions
Mix quinoa, pepitas, berries and apple; toss well. Serve over lettuce.
