Slow Cooker Hoppin John Chowder

Crockpot Slow Cooker Hoppin John ChowderRinging in the New Year wouldn’t be complete without a satisfying Hoppin’ John meal.  The traditional dish of black-eyed peas and rice takes an extra delicious spin with this simple slow-cooked chowder.  It’s a recipe that can be whipped up in matter of minutes, then cooked throughout the day, melding the flavors together and making your house smell rich and full of the smells and flavors of a prosperous New Year.  In just a few easy steps, you can have a pot of this yummy meal, which promises a 2011 full of wealth & joy.

Slow Cooker Hoppin John Chowder
Adapted from Bush Beans
1 1/2 cups instant white rice
1 pound ground beef sirloin
1/2 cup chopped green bell pepper
1 cup chopped onion
3 (15.5 ounce) cans black-eyed peas , undrained
1 (10.5 ounce) can condensed beef broth
2 (10 ounce) cans diced tomatoes and green chiles
1/2 cup water, or as needed

Prepare rice according to package instructions.  Cover & set aside.

In a large skillet, cook the ground sirloin, green pepper and onion over medium-high heat. Drain the grease, then place the mixture into a large crockpot. Dump the black-eyed peas, beef broth, diced tomatoes with green chilies over the ground beef mixture, then add just enough and enough water to cover everything in the crockpot.

Cover, and cook on low heat for 4 to 6 hours.  Serve over cooked rice.  Happy New Year!
