Whether you’re serving kids, adults, or a mix of both, everyone is going to go gaga over these simple Lasagna Pinwheels.  Made from a base of pre-made croissant dough, you can pull together a big batch of these delicious appetizers in less than 20 minutes.  They are full of rich, simple flavors, that picky eaters and finicky foodies will be sure to appreciate.  Smooth ricotta, crumbled sausage and tomato sauce, the soft melt of mozzarella.  The perfect party food for everyone.

  • 2 tubes Pillsbury croissant dough
  • 1/2 cup ricotta cheese
  • 1/2 cup pizza sauce
  • 1 clove garlic, crushed
  • 1/2 pound ground sausage, browned, drained, and crumbled
  • 18 small mozzarella medallions
  • Fresh parsley or basil, chopped

Lasagna4 150x150 Lasagna Pinwheel Bites: An Easy, Cheesy Appetizer Everyone Will LoveOn a lightly floured cutting board, roll out 1 tube of croissant dough, then pinch together each of the creases to create one large sheet of dough.  Spread half of the ricotta over the dough.  Stir the crushed garlic into the pizza sauce then spread half of the sauce over the ricotta.  Sprinkle half of the browned sausage over the pizza sauce.  From the longest end, roll the dough up tightly, pinch the edges to seal, then cut into 1 1/2″ rolls and place in a lightly greased baking dish.  Repeat with the second tube of croissant dough. 

Place a mozzarella medallion on top of each Lasagna Bites.  Sprinkle with a bit of chopped parsely or basil, then bake in an oven preheated to 400 degrees for 18-20 minutes, or until the rolls are golden brown and the cheese is bubbly.  Allow to cool for 10-15 minutes before serving.  Garnish with a sprinkle of fresh chopped basil or parsley.

Makes approximately 18 pinwheels.

I make these really good cheesy garlic roll up bites, and right in the middle of rolling out the dough for these, I kept flashing back to making those. It feels a lot similar. Anyways, for those, we put them in a muffin pan since they’re little roll ups and they’re always really cute and they’re little individual things. That was one suggestion I had. And another one was, have you considered using the rolls of pizza dough? They’re about the same size, but you don’t have to pinch together the seams or worry about them coming back open.
They’re in the oven now and we’re all excited to eat them. Thank you for your recipe :)
