The Best Dang Hoppin’ John Recipe Ever
1 chopped purple onion
1 red pepper, finely diced
3 slices bacon
2 cans (16 ounces each) black-eyed peas, drained
1 cup chopped cooked ham
1/4 teaspoon red pepper flakes
1/4 cup vinegar
3 tablespoons cup sugar
3 cups hot cooked rice
salt to taste
1/4 cup fresh spinach, finely chopped
In a large saucepan, cook bacon until crispy, crumble & return to pan. Add the chopped onion and bell pepper sauté until tender. Stir in black-eyed peas, ham, red pepper flakes, sugar, and vinegar. Simmer for 10 minutes; stir in hot cooked rice, salt & pepper, and spinach. Serve piping hot.
