The Naptime Chef for JMcLaughlin Peppermint Hot Fudge Sauce
Last weekend I had the pleasure of introducing a limited run Peppermint Hot Fudge Sauce line at the JMcLaughlin clothing store in Westport, CT. It was a blast to learn all about the packaged foods world. There is a lot that goes into getting even the most basic foods on shelves. There are so many steps from researching packaging, to finding suppliers to designing labels! Since a lot of you don’t live in the neighborhood and can’t run out to purchase a jar of this sauce, I am happy to provide the recipe. It’s a snap to pull together and is a terrific homemade gift for friends!
Peppermint Hot Fudge Sauce
Makes approximately 5 cups or 4 (9 ounce) mason jars
2 cups unsweetened cocoa powder
1 1/2 cups granulated sugar
1 cup light brown sugar
1/4 teaspoon Kosher salt
2 cups heavy cream
8 ounces (2 sticks) unsalted butter, cut into small pieces
2 teaspoon pure peppermint extract
1. In a double boiler or heatproof bowl placed over simmer water, stir together cocoa, sugar and salt. Make sure the bottom of the bowl is not touching the simmering water. Immediately add the cream and butter to the dry ingredients.
2. Cook this mixture over the simmering water, stirring constantly to make sure the sauce stays smooth and scraping down the sides of the bowl. Bring to a boil for 1 minute, then remove from the heat once the butter has melted.
3. Allow the sauce to cool for 5 minutes. Then stir in the peppermint extract.
4. This will store well in the refrigerator for up to one month. If giving as gifts, pour the sauce into a sterilized, airtight 9-ounce mason jar.
