Merry Christmas Breakfast Ideas: Gingerbread Pancakes

gingerbdpancakes Merry Christmas Breakfast Ideas: Gingerbread PancakesOn my Birthday, my husband took the day off and took me to a great cafe I have wanted to try for a long time called ‘When Pigs Fly’. It is a bit of a drive but I knew it would be funky and have unique offerings on their menu.

There were so many tempting and original ideas that I did not know where to start but my husband knew right away that he would be ordering the pancake special. Since that morning, I have been creating a recipe for Gingerbread Pancakes…..

Ingredients (Yield 6-8 pancakes)
1 cup flour
2 teaspoon baking powder
2 Tablespoons of sugar
1/2 teaspoon salt
1/4 teaspoon ground cloves
1.5 teaspoon ground cinnamon
1.5 teaspoon ground ginger
1.5 teaspoon ground nutmeg
1 egg, beaten
3/4 buttermilk
2 Tablespoons canola oil

Directions
1. Preheat a large nonstick griddle or skillet over a medium-low.

2. In a medium bowl, whisk together flour through nutmeg. In another separate bowl, beat together the eggs, buttermilk, and oil.

pour the wet ingredients into the dry ingredients, mixing only enough to combine them (a lumpy batter is desired so resist the urge to keep stirring – drop the spoon)

Pour about 1/4 cup of batter onto the griddle or skillet. Do not flip the pancake until the top is bubbling and it is golden brown on the bottom. Flip and cook the other side until it is golden brown.
