Eggnog Drop Scones 1024x756 Easy Christmas Breakfast: Eggnog Drop SconesEggnog isn’t just for drinking anymore – its rich creaminess is ideal for making scones, adding sweetness and spice along with a wonderful texture. If you’re hesitant to make scones from scratch because of the mess it could make of your kitchen – what with the rolling and cutting on a floured countertop – drop scones are more streamlined, made with a wetter dough dropped by the large spoonful onto a baking sheet before going into the oven. Drop scones are perfect for Christmas morning too – when you want something freshly baked but want to spend minimal time in the kitchen. And once the big day has passed, it’s a great way to use up the surplus in your fridge.

Because the dough is sticker than that you’d roll or pat and cut, you won’t need to brush their tops with milk, but coarse sugar will still stick if you want to sprinkle some over before sliding them into the oven.

Eggnog Drop Scones

2 cups all-purpose flour
1/4 cup sugar (white or brown)
1 Tbsp. baking powder
1/4 tsp. salt
1/3 cup butter, cut into pieces
1 cup (ish) eggnog
1 large egg
a big handful of raisins or other dried fruit

coarse sugar, for sprinkling (optional)

Preheat oven to 425F. In a bowl, stir together the flour, sugar, baking powder and salt. Add the butter and blend it with a fork, whisk, pastry blender or your fingers (or do it all in the food processor, if you have one), leaving some lumps no bigger than a pea.

Stir together the eggnog and egg with a fork and add to the flour mixture; stir with a spatula until just barely combined. Add the raisins and stir a couple more times, then drop the sticky dough in large spoonfuls onto a buttered or parchment-lined baking sheet. Sprinkle the tops with coarse sugar, if you like.

Bake for about 15 minutes, depending on the size of your scones, until golden. Makes 6-10 scones.
