Happy Thanksgiving 2010: Forget Roasting a Turkey, Think Cheddar Garlic Mashed Potato Recipe
It is not just about roasting a Turkey as the sides are important as well. Regardless of whether you are a making mashed sweet potatoes or regular white mashed potatoes, the recipe needs to be moist and rich. The mashed potato recipe I offer today contains both sweet potatoes and Yukon gold potatoes.
As if that is not yummy enough, antoher sure fire way to make your Mashed Potato Recipe impressive is by using ingredients such as garlic and cheddar cheese….
Ingredients (Yield: 12 servings)
3-3/4 pounds Yukon Gold potatoes, peeled and cubed
1 large sweet potato, peeled and cubed
5 garlic cloves, halved
1 cup reduced-fat sour cream
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1-1/2 teaspoons salt
1/2 teaspoon pepper
1.5 cups shredded reduced-fat cheddar cheese, divided
Directions
Preheat the oven to 350 degrees. Place the potatoes and garlic in a large pot and cover with water. Bring to a boil, reduce heat, cover and cook for 10-15 minutes or until potatoes are tender.
Drain the potatoes and garlic and place them in a large bowl. Mash and then stir in the sour cream, thyme, salt, pepper and 1 cup of the cheese. Transfer to a 3-qt. baking dish that has been coated with cooking spray. Sprinkle the remaining 1/2 cup cheese on top and bake for 10-15 minutes.
