Rainy Day Turkey Noodle Soup

turkey noodle soup 300x199 Rainy Day Turkey Noodle SoupToday was a soup day. Right around 4:00 p.m. the sky turned gray, and the grayness was soon followed by drips and drops and then an all out downpour of cold and wet. Not that I’m complaining.

With nowhere to go and nowhere to be, having a minute to cozy up around the dinner table with my kids and my husband, a warm pot of freshly made simple turkey noodle soup and gooey grilled cheese was just what I needed tonight as I listened to the rain fall all around us.

Turkey Noodle Soup
3 tablespoons butter
1/2 cup diced carrots
1/2 cup diced celery
1/2 cup diced onions
2 cloves garlic, minced
3 tablespoons flour
8 cups turkey stock (homemade from leftover turkey)
8 ounces linguine pasta
1 cup cubed cooked turkey
2 fresh stems of thyme
1 bunch fresh parsley
salt and pepper to taste

In a large stockpot melt butter. Add in carrots, celery and onions and cook for 4-5 minutes over medium-high heat. Add in garlic and stir to combine. Sprinkle on flour. Continue cooking for 2-3 minutes until flour begins to change from yellow to a light golden brown. Pour in the turkey stock. Immediately take linguine and break into 1-2″ pieces, adding them to the pot. Add in turkey and thyme. Cook for 8 minutes until pasta is al dente. Sprinkle in fresh parsley and Add salt and pepper to taste.

Makes 7 servings.

Between you & Robyn, I almost wish I was sick so someone would bring me these delicious chicken noodle soups!

Sweet! Now I have the perfect thing to do with all that leftover fried turkey sitting in my fridge from the turkey fry.
