Red Velvet Sandwich Cookies

Cream cheese centers smashed between two bright red rounds makes the perfect after-school snack for my kids, but it’s special and stunning and could find its way to a dessert plate or tray just as easily.

There is a bit of a red velvet obsession around these parts. It makes its face known with lovelies such as red velvet chocolate chip Bundt cake with Nutella frosting, red velvet cupcakes and even red velvet hot chocolate. Obviously we find the allure of rich chocolate cake very appealing, or perhaps it is just its rich, red color that keeps us coming back for more. Either way, these red velvet cookies are sure to satisfy those red velvet lusts you’ve been having, and as a bonus, they’re perfect for shipping as gifts or packing up and placing under the tree come Christmastime.

Homemade Red Velvet Cookies adapted from Paula Dean

1/2 cup butter, softened
1 1/4 cups sugar
1 egg
1 teaspoon vanilla extract
1 tablespoon natural red food coloring such as Seelect or India Tree
1 1/3 cups all-purpose flour
4 tablespoons cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 375 degrees F. In a large mixing bowl, cream together butter and sugar. Add in egg and beat well. Beat in vanilla and red food coloring. In a separate bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt. Stir the dry ingredients into the wet.

Scoop dough onto a lined cookie sheet using a generous medium scoop (2-3 tablespoons). Bake at 375 degrees F for 10-12 minutes until centers appear set. Allow to cool sightly. Then pull the liner onto the wire cooling rack to cool completely.

Cheater Red Velvet Cookies
1 box red velvet cake mix
2 eggs
1/2 cup canola oil
2 tablespoons flour

Preheat oven to 350 degrees F. Mix together cake mix, eggs, oil and flour. Scoop onto lined baking sheet. Bake at 350 degrees F for 10-12 minutes. Allow to cool. Spread one cookie with filling and top with a second cookie.

Cream Cheese Filling

8 ounces cream cheese
4 tablespoons butter, softened
2 teaspoons milk
1 teaspoon vanilla
4 cups powdered sugar

Cream together cream cheese and butter in a medium bowl. Beat in milk and vanilla. Sift powdered sugar over the wet ingredients and beat in until smooth. Spread in between two cooled red velvet cookies.

Makes 10-15 sandwiches.

THANKS for stating that natural food coloring should be added. It’s tricky to find – natural stores have them, but the red velvet craze means lots of red dye 40 in most of the cupcakes. So good going!

Pretty! I’m going to make these for my Holiday Cookie exchange and add chopped peppermint candy to the filling inside….or maybe do singles and add a swirl of the frosting and peppermints on top ! Thanks for the recipe!

So I hope anyone doesn’t kill me…but I’m not a huge fan of red velvet cake. It’s good, but I think there are better flavors of cake at the supermarket. Would using a different box of cake mix be sacrilegious?

Ive never been very good at baking.. but I decided to try my hand at these tonight. Mine dont look quite as pretty as the ones featured here.. but I found them to be very easy to make & My honey loved them! We are giving them as Christmas goodies to co-workers!

I made these this afternoon, and they are awesome! I agree with Michelle above, though — I couldn’t get mine to crinkle like the ones in the picture. They are very cakey, which is good texturally, but not as nice visually, ya know? Either way, thanks for sharing! :)
