Green Salad with Bacon, Pears, and Buttermilk Dressing
I hate to sing the praises of bacon because it feels so overdone these days. Let’s just agree that most of us really like bacon. It tastes good, it smells good. We don’t need to go get tattoos of it or whatever the kids are doing these days. Do kids still get tattoos? Not little kids. Like college kids.
Now that we’ve established that bacon is good, let’s talk about buttermilk. Have you cooked with buttermilk lately? It’s fantastic. Tangy and rich- there are not a lot of foodstuffs like it. It’s a nice counterpoint to the smoky sweetness of the bacon and the crisp sweetness of the pears in this salad. Overall, this salad has a lot of exciting flavors and it’s pretty filling, too. It can stand alone as a lunch or makes a great complement to a light dinner.
Green Salad with Bacon, Pears and Buttermilk Dressing
for the dressing
1 tablespoon buttermilk
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon prepared horseradish
pinch of salt and pepper
1 teaspoon diced parsley
Whisk together the buttermilk, olive oil and lemon juice. Then add the horseradish, salt and pepper. Finally, sprinkle in the parsley.
for the salad
1 bunch of lettuce, such as red or green leaf
3 strips fried bacon
1 thinly sliced pear
Place the lettuce in a large salad bowl. Then crumble in the bacon, and add the pears. Toss gently with the dressing, just until all the ingredients are coated. Serve immediately. Leftover dressing will keep in the fridge for a couple of days.
