Cobb Salad Sandwich
Sometimes, when I have turkey in the house, I get a craving for this salad, with its Roquefort cheese, bacon, and avocado. But I have always wanted to make it into a sandwich. The Cobb salad was created in the 1930s at the Hollywood Brown Derby restaurant, and is named for its owner at the time, Robert Brown Cobb.
After making the turkey roast and the brown sugar bacon this week, I had some leftovers, so I boiled some eggs, and went out and got some blue cheese, lettuce, and tomatoes. Unfortunately, I forgot to buy avocados, so you’ll just have to pretend you see them in the picture.
Cobb Salad Sandwich
(You can use an individual size ciabatta bread, like I did, but this recipe is for a large ciabatta bread, and serves 4-5 people)
1 large ciabatta bread, sliced in half
blue cheese dressing (recipe follows)
4 large lettuce leaves
3 hard boiled eggs, sliced
2 large avocados, sliced
1 tomato, thinly sliced
4 thick slices turkey (or 6 thin slices of deli turkey)
4 slices bacon
Spread each half of the bread with a thin layer of the blue cheese dressing. On one half, layer on the lettuce, eggs, and avocado. On the other half, layer on the tomato slices, turkey, and bacon. Season with salt and pepper.
