Cooking with Kelle Hampton: Easy Pork Carnitas
Every morning, there’s a routine. I roll out of bed, rouse my snoozing babes, pad it to the kitchen to cook a pan full of breakfast, hop online to check email, then sneak a quick peek at Kelle Hampton’s blog with fingers crossed, hoping for updates. Since discovering Kelle through her viral blog post on daughter Nella Cordelia’s birth story, I’ve been hooked. Kelle has a way with words. She has a way with photography. Even more so, Kelle has a way with life. Which is to say…she lives it. She sucks the ever lovin’ marrow out of it, and I am inspired daily by her musings on motherhood, womanhood, and everyday everythings. I recently had a chance to chat with Kelle about how she ‘rock’s it all out.’ Don’t miss her candid, touching interview on making family dinner a priority. It’ll turn you into an insta Kelle Hampton junkie, too. Something I shall be forever more, because Kelle was not only nice enough to let us in on a few of her 5 Secrets to Family Dinner Success, she was also willing to share her incredible recipe for Easy Pork Carnitas. Kelle Hampton’s Easy Pork Carnitas
(altered from a recipe passed from friend, Dede)
2 pork tenderloins (about 1 pound each)
1 jar of salsa verde (green salsa–any kind)
1 can Rotel tomotoes
1 can chopped green chiles
1 onion, chopped in large pieces
Cover in crockpot and cook on low until pork easily forks apart (about 10 hours). Serve buffet-style with flour tortillas, cheese, cilantro, avocado, tomatoes, lettuce and sour cream.

How does she have any weight in giving advice for “busy moms” when neither she nor her husband is employed and they live off of government welfare and his parents’ money?
