Halloween Cake Pops

As Halloween approaches, it’s fun to look out for new and fun treats. Cake pops and cake balls, made famous by the lovely Bakerella, are a cute and colorful way to satisfy a sweet tooth.

If anyone is a little late in the game, cake pops, or cake balls are cake crumbs, mixed with cream cheese frosting until the consistency resembles modeling clay. They are then shaped into balls, cubes, etc., dipped in colored chocolate, and decorated.

Now, Angie Dudley (aka Bakerella) is meticulous, and her cake pops are flawless. She has a superior talent for getting things to look perfect and would put many wedding cake designers to shame.

When I decided to make these, my imagination went crazy. I thought of making little Halloween treat bags, Frankenteins, skeletons, ghosts, pumpkins, etc. Bu then I thought it might be best, for now, to stick to something easy. That’s why I stuck to making these simple cake balls, dipped in chocolate and sprinkles. I did take it a little further and shaped the cake crumbs into rectangular cubes.

Halloween Cake Pops

1 8×8″ cake, such as chocolate or pumpkin, crumbled
1 cup cream cheese frosting (recipe follows)
1 bag chocolate chips
1 bag white chocolate chips
sprinkles or small candies for decorating

1. In a large bowl, combine the cake crumbs and some of the frosting. Add more of the frosting, little by little, until you achieve the consistency of play dough.

2. Shape the cake crumb mixture into 2″ balls, cubes, or desired shape. Insert a lollipop stick or a popsicle stick and refrigerate while you melt the chocolate.

3. In two microwave safe bowls, melt the chocolate in the microwave by heating, and stirring in 30 second intervals.

4. Dip each cake pop in the chocolate and dip in sprinkles to cover the bottom half. Transfer to a plate, sprinkles side down, and refrigerate until the chocolate is set.

Cream Cheese Frosting

1/2 stick (4 tablespoons) unsalted butter, at room temperature
4 ounces cream cheese at room temperature
1 cup powdered sugar
1 tablespoon cream or milk
1 teaspoon pure vanilla extract

Mix all ingredients together with an electric mixer until smooth. Refrigerate until ready to use.

@Laurie – How much crumbs did you have in your mix vs. frosting? You may have had too much. Also, when you put it in the fridge, put them cake side down on wax paper. It’ll keep them from sticking while giving them a chance to cool while you melt the chocolate. Good luck!

Does the cream cheese frosting harden? I wanted to make these for a school snack, but need to put them in a cellophane baggie… will these stick? Many thanks!

if you wanted the chocolate on the outside to harden a little more (easier for transport) you can add a little regular household wax-found near canning supplies in the grocery store-.It is completely edible and will make the chocolate a little shinier.

Elizabeth – the frosting is on the inside, making the cake crumbs moist and allowing them to stick together in a ball. Chocolate is on the outside, and the chocolate hardens. So yes, you can transport them!

Another way to keep the pops from sliding is to dip the stick in the melted chocolate before you stick it in the cake ball. Also, only have the stick go about 1/2 way into the ball.

I love this. I am baking my cake as I type. I was just wondering if anyone has used a different flavor of icing than cream cheese? Is that really the best, I wonder?

Greetings… I am so excited to be making these Cake Pops in a couple of days for halloween. I can’t wait to taste them. Do you just pop them in your mouth and your good to go. Or are you looking to pop two or three or more, then ready to get your drink on. (lol) My daughter is two years old and my husband and I invited family to come over and eat, drink and pass out candy. I’m also trying to sneak in a dance party, but we’ll see about that. For dessert, I think I’ll do a combination of these awesome looking cake balls on sticks and some without sticks. Maybe even some made with creamcheese frosting and some with a diffrent frosting like strawberry. I read about a woman trying strawberry and commenting how she thought is was way better than creamcheese. So I’m trying both for the first time this weekend. I wonder how many per quest? I think I would want to eat three or four? Whatever would make a slice of cake, right? I’m not sure what they look like but, I will real soon. I might have to start early just to get my taste buds satisfied.

Hands down, Apple’s app store wins by a mile. It’s a huge selection of all sorts of apps vs a rather sad selection of a handful for Zune. Microsoft has plans, especially in the realm of games, but I’m not sure I’d want to bet on the future if this aspect is important to you. The iPod is a much better choice in that case.
