Peach & Tomato Salad: A Last Hurrah (and New Beginning)

peach tomato salad Peach & Tomato Salad: A Last Hurrah (and New Beginning) They say that with every end comes a new beginning. You know, that whole death and rebirth thing. Summer’s bounty is coming to a close to make way for a process that will make next summer’s bounty possible. I know it’s the way it’s supposed to be, but it doesn’t make it any easier to say goodbye to plums, corn, peaches, tomatoes. Sigh. Tomatoes. (It’s hardest to say goodbye to them.) Plenty of autumn goodness lies ahead—apples, pears, gourds, parsnips, other root veggies—but it’s not the same. And I’m a little sad about it.

But there’s something, a new beginning, if you will, that’s got my spirits high.

Though it’s time to bid farewell to the joy of summer cooking, I’m saying hello to you all! See, today marks the beginning of what promises to be a long, happy relationship with The Family Table. I’m humbled to join the ranks alongside so many fantastic food writers. And, even more, to be chatting and cooking my way through Fall and Winter, Spring and next Summer, and beyond with you good folks.

If you don’t know me already, check out my blog, One Hungry Mama, where I post even more family-friendly recipes that are simple, but delicious enough for grown-ups, and nutritious and adaptable for kids as young as 6 months. You’ll also find that I write about how and why we should share our healthy “grown up” food with the kiddos (yup, that means ditch the baby food), why I don’t believe in hiding vegetables, and how, though children change the way that we cook, they don’t have to change what we eat.

Or you can just stay tuned here. I’m sure we’ll get into it. And I can’t wait to hear from you.

In the meantime, here’s my goodbye-to-summer Peach and Tomato Salad. You’ll notice that it’s barely dressed. That’s the point. This perfect late-summer dish is all about letting the ingredients sing. Because soon they’ll go silent. But, thankfully, we’ll have each other to talk, eat and cook with until next summer.

Thank you and enjoy! I’m hoping to see great peaches and tomatoes at the market this weekend. Fingers crossed that we still have a weekend or two left to make this.

Thanks for this recipe! I tried it out this evening but with balsamic vinegar instead of cider (since it was what I had). It was amazing – very delicious! :) What a great combination of flavors.
