Real Food Fast: Cannellini Bean Salad
This time of year in Rhode Island means cooler temperatures come quickly and often leads us to all wanting to sneak in some time at the beach before it gets too cold. That means as soon as daddy is done working, we throw on a hoodie, toss some food into the cooler and go dip our toes in the ocean.
Whether you or running to the beach or had a busy day, you need a salad that you can toss together in about 4 minutes….
This salad is packed with fiber thanks to the cannellini beans. Plus,the kids did not even seem to care to inspect the contents of the salad as they just wanted to run around so score one for Mom. By the way, if you have some fresh lemons, I bet the juice would be a great acid in lieu of the vinegar.
Ingredients (rough estimates)
1 can Canellini beans, rinsed
1/3 Red Onion, sliced
1/3 Red Pepper, minced
1 clove of Garlic, minced
Handful of fresh Cilantro, chopped
1 tablespoon Olive Oil
1 Tablespoon Red Wine Vinegar
Salt & Pepper to taste
Mix all ingredients and enjoy as is or even stuff into a pita pocket or wrap with some lettuce.
