BBQ Ribs2 300x200 Labor Day Easy: Baby Back Ribs with Cola BBQ SauceLabor Day should be easy.  After all, it’s a day devoted to allowing the everyday worker some time off.  So, why would you spend hours in the kitchen, when you can cook up a pan full of Sweet Cola Barbecue Sauce and Baby Back Ribs in a matter of minutes?  Toss in a handful of sliced potatoes, some olive-oiled corn on the cob, and you’ve got an delicious, fun-to-eat meal ready in no time at all, without the least bit of fuss. 

This Cola Barbecue Sauce cooks up with a sweet-savory kick, reminiscent of good, Texas barbecue.  It’s absolutely divine.  You’re going to adore it.  My children loved the meal because it was messy, but they could eat the entire thing with their hands.  No need to pick up a fork for any part of it, just toss it on the table and enjoy the day.  After all, it’s Labor Day!  No labor for you.  Lots of delicious.  Now, that’s what a holiday is all about.

1 1/2 c. ketchup
2 T. mustard
1 T. garlic salt
1 T. onion powder
1 t. smoked paprika
1 can cola (use the sort made with real sugar)
3 T. vinegar
In a large bowl, stir together all ingredients until well mixed.

Easy Baby Back Ribs
3-6 pounds baby back ribs, sliced into single riblets
10-15 new potatoes, cut into spears
3 T. olive oil
Salt & Pepper to taste
Corn on the Cob, peeled
Place ribs in a large roasting dish.  Pour Cola BBQ Sauce over the ribs, making sure they are well coated.  Toss potatoes with olive oil, salt and pepper, place on one half of a cookie sheet.  Drizzle olive oil over corn on the cob, then wrap well in aluminum foil.  Place the foil-covered corn on the second half of the cookie sheet.  Cook ribs, potatoes, and corn in an oven preheated to 375 for about an hour, stirring the ribs often to coat with the sauce, and using a spatula to flip over the oven fries to ensure even crispiness.  Remove all from the oven, toss the fries and corn on top of the ribs.  Serve and enjoy!
