Blackberry Soup: A Winner with Adults and Picky Eaters
This dish may look divine and refined. And it is. You could serve it at a summer dinner party. But better yet, your kids will love it.
Remember those cinnamon chips I made with fruit salsa? This is a similar thing—a dessert masked as something that is normally savory.
This soup is healthy (for the most part) containing a full serving of fruit, and minimal added sugar. I can make it with a food mill, which means my kids will do most of the work if I let them.
You can use any berries you want with this, or even add in peaches or nectarines. I just happened to have tons of blackberries lying around.
Blackberry Soup
4 cups blackberries, reserve a few berries for garnish
3 tablespoons honey (more or less, depending on the sweetness of the berries)
1/3 cup clear 100% juice, such as white grape, apple, or peach
4 pieces of brioche bread, toasted and buttered
whipped cream (recipe follows)
1. Pass the berries through a fine mesh sieve or a food mill to extract all the pulp. Add honey and juice to the pulp.*
2. Divide into 4 shallow bowls. Garnish with extra berries, brioche, and whipped cream.
* I made this soup in summer, and served it cold. You could, however, heat it on the stove for a few minutes after step 1, and serve it warm.
Whipped Cream
1/2 cup heavy cream
1/2 teaspoon vanilla extract
1 tablespoon confectioner’s sugar
1. Whip all ingredients together with an electric mixer until soft peaks form.
