1-2-3 Tomato Sauce

marinara 300x215 1 2 3 Tomato SauceMy friend left me  in charge of her garden for a week while she’s gone, so the kids and I have been free to eat all her tomatoes, blackberries, and whatever else is growing there.

Before she left, she gave me a hint for using up some of the dozens of tomatoes we would get everyday. The recipe is so simple, I thought I would try to compress it into three easy steps.

1-2-3 Tomato Sauce

8-10 garden fresh tomatoes, cut in 3 inch pieces
3 tablespoons olive oil
1-2 teaspoons kosher salt
1/2 teaspoon pepper
3 cloves garlic (optional)
1 onion, cut in 1 inch pieces (optional)
1 teaspoon Italian seasoning (optional)

1. Toss tomato chunks with olive oil, salt and pepper, and garlic, onion, and Italian seasoning (if using).

2. Broil for 10-15 minutes, or until tomatoes start to blacken.

3. Pass through a food mill, or puree in a food processor.

Okay, your tomato sauce is done, but to add a 4th step, serve or store.
