There are cookbooks for kids, and then there are cookbooks for kids. I’ve flipped through my fair share, to say the least, and most of them have gone by the wayside. There are two, however, that I reference quite frequently and have come to love. The first is Ready, Steady, Spaghetti: Cooking For Kids And With Kids by Lucy Broadhurst. A beautifully photographed book, the recipes are accessible and family-friendly. Every home cook will find the step-by-step photos very helpful along with the tips on working with children in the kitchen. The second is Bean Appetit: Hip And Healthy Ways To Have Fun With Food by Shannon Seip and Kelly Parthen. Based on the recipes they teach at their Bean Sprouts Cafe and Cooking School, this book combines healthy food with recipes, games, songs and activities. The ideas for presenting vegetables to your child is endless, it is bound to become a go-to resource. The best news about these two books is that Andrews McMeel has generously agreed to give away a set to one lucky Family Kitchen reader! Tia commented on Aug 04 10 at 11:39 pmMy mom is a big salad fan so I make a salad with beets, tofu, cucumbers, tomatoes, basil and serve it over quinoa with a dijon vinaigrette. Best part is that the salad turns pink unless you use golden beets and then it’s a festive salad!
Leanne - Momcast commented on Aug 05 10 at 2:01 amMy favourite veggie dish to make? Well, we generally put out veggies into stuff like soups, stir fries and casseroles. Tonight was home made mac and cheese with broccoli and kale. When I cook things together like this, I’m definitely upping the chances the veggies will get ingested, but also, I find my older son is really appreciative of the “new” veggies he’s encountering when they are part of a delicious soup or stir fry.
Barbara commented on Aug 05 10 at 4:20 amOur family loves all the vegetables: we eat them at every meal, alternating those cooked (I like chicory boiled and pan-fried with garlic oil and rosemary, chard boiled and seasoned with oil and lemon, fried eggplant, zucchini casserole, pickled peppers, sautéed mushrooms, potatoes steamed or baked, cauliflower au gratin, etc..) to the raw, delicious salads such as tomato, cucumber, red onion with basil, or salads of lettuce and radicchio.

Sarah C commented on Aug 05 10 at 1:27 pmDefinitely bell peppers! They are so easy to slip into pretty much anything from eggs to a stir-fry, give great color, and “hide” well enough that my toddler will eat them easily!
Anne commented on Aug 05 10 at 2:09 pmMy favorite veggie dish to cook is stir-fry. We have it about once a week because I can throw whatever is the fridge into a wok. My kids’ favorite version of stir-fry includes sugar snap peas. They open the hull(?) and eat only the peas inside.
Jessica commented on Aug 06 10 at 3:18 amThanks to the wonders of youtube, our favorite family veggie dish to cook and eat together is crunchy kale. In a desperate moment (6 pm, a dark and stormy night, nothing but the infernal kale left in the CSA bin), I spelled “K-A-L-E” out loud to my six year old, and she googled it. Only to discover a video with a cute “teen-agerish” girl showing the world how to make crunchy kale. We love anything teenagerish girls do in this household. Watching the succinct show was a revelation: my daughters really did prepare the kale themselves. And then they ate it. And then they asked me to take it to their class for preschool snacks. And then I left it in the oven on something under 250 degrees for two days. (The oven’s indicator light is broken.) Guess what? Tasted great. That stuff is magic. I’m grateful to it as a gateway drug, too: this summer, we all make and eat raw kale salads tossed with whatever else we have on hand, be it tomatoes and feta cheese or leftover quinoa or tuna or garbanzo beans. It has been surprisingly successful. Good thing, too– there is a fair amount coming up in the weed patch we call a garden.
Janna M commented on Aug 06 10 at 12:55 pmMy kids are so picky. They love raw veggies more than cooked. Cucumber, carrots and red peppers are the most favorite but my son loves cooked broccoli. My whole family will devour zucchini muffins though.
AJBP commented on Aug 07 10 at 8:28 amRoasted veggies reign supreme in our house. We love to crank up the oven, toss them in a little olive oil and let the oven work its magic. The result is a version that even the pickiest little ones will enjoy – especially if it has a nice dusting of parmesan cheese. Broccoli, cauliflower, asparagus, carrots and parsnips spend the most time roasting in our house.

We have several variations — olive oil and lemon juice, Braggs and olive oil, and Braggs, olive oil and nutritional yeast — roasted at 400 until crispy. YUM! Another veggie recipe we love is veggie fajitas. I marinate portobellos, tomatoes, purple onions, fresh corn off of the cob, and mixed peppers in a green salsa, then cook in a skillet at high heat until the vegetables are tender and almost carmelized. So good!

Jackie commented on Aug 09 10 at 8:46 pmI’m mostly a vegetarian (it is a long story…) so we eat lots of vegetable- based dinners. I think our favorite is grilled eggplant sandwiches. We dress them with arugula and a homemade blue cheese – garlic sauce. Add a giant slice of tomato and eat it all on toasted ciabatta bread – and you are in heaven!

We love them raw as a snack, and our favorite way to cook them is to cut them into wedges and grill cut side down. Then flip them over, sprinkle with feta cheese and continue cooking until the cheese melts. Yum!
