I’ve flipped through my fair share, to say the least, and most of them have gone by the wayside. There are two, however, that I reference quite frequently and have come to love. The first is Ready, Steady, Spaghetti: Cooking For Kids And With Kids by Lucy Broadhurst. A beautifully photographed book, the recipes are accessible and family-friendly. Every home cook will  find the step-by-step photos very helpful along with the tips on working with children in the kitchen. The second is Bean Appetit: Hip And Healthy Ways To Have Fun With Food by Shannon Seip and Kelly Parthen. Based on the recipes they teach at their Bean Sprouts Cafe and Cooking School, this book combines healthy food with recipes, games, songs and activities. The ideas for presenting vegetables to your child is endless, it is bound to become a go-to resource. The best news about these two books is that Andrews McMeel has generously agreed to give away a set to one lucky Family Kitchen reader! Kale chips!!

I have a two-and-a-half year old boy, who is extremely picky and doesn’t eat many different types of food. However, he loves to help out in the kitchen, even with dishes he won’t eat. One dish he’ll help prepare AND eat is sweet potatoes – I’ll slice them, while he lays them on a cooking sheet. Then I’ll help him brush them with olive oil, sprinkle them with brown sugar and bake them. It’s so fun to see how proud he is of himself when they’re done. :)

Right now, my favorite vegetable dish to cook and eat with my family are zucchini fritters. I love them because one, my daughter will eat them! And two, they use up the bounty of zucchini and summer squash that we have from our CSA. Win-win!

We love to cook green beans and make a fresh basil pesto to go over the top of them. My kids gobble them up!

My daughter is just two years old and doesn’t like a lot of vegetables (she used to eat a variety of things, and has gotten pickier over the past few months). Her favorite thing right now is cherry tomatoes, just chopped up raw and eaten in hand. Or scattered over anything else — chicken, pasta, fish sticks, whatever. OK, it’s not cooking, but she loves them, and they’re fresh and gorgeous right now. Would love more ideas on vegetables to cook for her!

this probably sounds weird but I make pinto beans and cornbread, fried yellow squash, and mustard greens. The beans and greens sit on the stove all day till I’m ready to make the squash and corn bread.

Right now, we’re in the middle of garden season – so the kids love going out to the garden and picking zucchini, tomatoes, edamames, and whatever else they can find. We love figuring out new ways to make vegetables fun with seasonings, spices, and different ways to prepare them. When they come up with ideas…they will always eat their creations!

I have strange kids and they love just about any type o veggies. Broccoli is their favorite.

Well, even though my 8 year old loves to help in the kitchen, he is quite the picky eater. However, he really enjoys oven roasted asparagus. Drizzle fresh asparagus with olive oil, sprinkle with kosher salt and freshly ground pepper (his favorite part — grinding the pepper!) and roast in a 450′F oven. It’s just great! Even my husband, who claims to not like asparagus, loves this.

My 2 yr old gal and love making zucchini boats for dinner…slice a zucchini lengthwise, scrape out the seeds, add finely chopped veggies, top with cheese and bake about 40 minutes. Even my husband says YUM!

This time of year, we love Caprese salad. I make it with cherry tomatoes so my daughter loves it and since we’re in WI, we have fresh mozzarella!

I love making sweet potato fries for my family. Just chop them up, drizzle with a little olive oil and then pop them in the oven. You can eat them alone, with ketchup or (my personal fave) homemade apple butter. Everyone loves them, but I especially do because they’re actually healthy!

Trees are my kids favorite (aka broccoli). Corn on the Cob is also huge in my family. My youngest comes up for air with her little face covered with corn bits… adorable to see.

Our family loves all the vegetables: we eat them at every meal, alternating those cooked (I like chicory boiled and pan-fried with garlic oil and rosemary, chard boiled and seasoned with oil and lemon, fried eggplant, zucchini casserole, pickled peppers, sautéed mushrooms, potatoes steamed or baked, cauliflower au gratin, etc..) to the raw, delicious salads such as tomato, cucumber, red onion with basil, or salads of lettuce and radicchio.

Kelsey turned us on to the zucchini bites and my 13 month old daughter can’t get enough of them (us too – my husband actually asked last night if the batch I made was for Hannah or for us!) I just passed the recipe along to my entire Park Slope June Moms group and a bunch went out and bought zucchini yesterday. We are always looking for great and easy things to make the kids – these books look great.

my family’s favorite vegetable to eat is mixed greens. Collards, mustard turnip and kale. i cannot get them prepared fast enough before some one wants a sample plate…this has been the case while my kids were growing up and now when my grandkids come over they enjoy them too

My new favorite…..OKRA. Roasted in the oven-removes the “slimy” texture. It is fabuolus.

My son loves to help blend the veggies I hide in all of his foods. We’ll steam cauliflower and zucchini or carrots and sweet potatoes then puree them up. Whenever I make mac and cheese or bolognese sauce, in goes our fun purees for an extra boost!

I have a Farmer’s Market vegetable lasagna that I like to pack full of veggies like spinach, summer squash and carrots. The kids seem to like it.

My 3 year old son is a picky eater, but when he gets the opportunity to pick a veggie from our garden (tomato, green pepper, beans) and then help make a dish with it (like veggie lasagna or toss some into his grilled cheese) he will eat it!

My daughter is pretty picky – so it’s tough! She does like plain broccoli, though – just the floral part, steamed with nothing on it… And fresh cucumber with salt is good, too.

I haven’t found much in the way of casseroles, salads, etc. that she’ll eat.
