An Uncommon Campfire Meal
Camping itself kind of excites me, getting away from constantly being plugged in. However, the food that comes with camping can be a bore. This uncommon campfire meal will have you coming back for seconds, and it’s just the pick-me-up you need in the middle of a 3-day camping trip to keep you going for another day of canoeing, hiking and sleeping on the ground.
Enter the burrito. The most unlikely campfire food, cooked right on the fire, no grate needed. The preparation is easy, and eating is as simple as pealing back the foil that houses the burrito during cooking. This is definitely better than a boring hot dog or rehydrated soup mix.

Tip: We make taco meat ahead of time and freeze it. It acts as ice, keeping your cooler cold, and by Day 2 or 3 it’ll be nearly thawed and ready to be scooped into your burritos and tossed on the grill. Easy to assemble and perfectly melted and just slightly crisp after cooking, these burritos are a campfire favorite.
Fire-Grilled Burritos
1 pound taco meat
1 cup cooked white rice
½ cup shredded cheese
¼ cup salsa verde
4 burrito-sized flour tortillas (10”)
½ cup pico de gallo
4 foil sheets
Fill each flour tortilla with ¼ of the taco meat, rice, cheese and salsa. Roll halfway, fold over ends and continue rolling into burrito. Wrap the burrito in foil.
Cook the burrito over smoldering coals farther from the main flame for 3 minutes, flip and continue cooking for 3 additional minutes. Remove from heat. Allow to cool slightly and serve with pico de gallo.
Makes 4 burritos.

Beth Ann Bentley commented on Jul 21 10 at 9:24 amI’d make these ahead of time at home, then freeze them. Put them all in a container or re-useable bag for tranport. They will still act as an ice pack and you have less mess and prep work at the camp site
Tim commented on Jul 07 11 at 11:23 pmWe love to do this but never made them from scratch, just bought our favorite frozen burrito’s and let thaw, then wrap in foil and cook the same way. But I am def. trying your version here at home on the BBQ. Good memories.
