Grasshopper Cookie Cupcakes

OreoCookie2 300x200 Grasshopper Cookie CupcakesIf there is one cookie most kids can agree on, it’s Oreo’s.  I suppose the same could be said for grown-up’s as well.  The classic cookie-and-cream flavor combination has found it’s way from cookie form into ice creams, candy bars, s’mores, rice krispies, and a hundred other recipes incarnations.  Chocolate cookie, vanilla creme.  An absolutely classic flavor.  Add to that the winning combination of green peppermint, and the subtle coolness of a cream cheese based cupcake, and this is one recipe everyone will love.

Grasshopper Mint Oreo Cookie Cups

•8 ounce(s) of cream cheese
•1/3 cup(s) of sweetened condensed milk
•1 egg
•1/4 tsp. of peppermint extract
•1/4 tsp. of vanilla extract
•1 tbsp. of flour
•15 OREO cookies
•1/3 cup(s) of mini chocolate chips
Steps
1.In a large bowl, combine cream cheese, sweetened condensed milk, egg, peppermint extract, and flour. MIx together with an electric beater until light and fluffy.
2.Stir 1/4 c. of the mini chocolate chips into the PHILADELPHIA CREAM CHEESE mixture.
3.Line muffin tin with cupcake wrappers.
4.In the bottom of each cupcake wrapper, place one full OREO cookie.
5.Spoon cream cheese mixture over the OREO cookies, filling the muffin tins to 3/4 full. (There will be enough batter to fill 9 rounds.)
6.Coarsely crush the six remaining OREO cookies, then sprinkle over the cream cheese layer in each muffin cup.
7.Sprinkle remaining mini chocolate chips over the cream cheese layer in each muffin cup.
8.Bake in an oven preheated to 325 degrees for 20-22 minutes, or just until the cream cheese layer puffs and sets up slightly.
9.Remove from oven and allow to cool before serving.
10.If desired, serve with a dollop of fresh whipped cream for garnish. Enjoy!

I added green food coloring to make it look like grasshopers and also added the vanilla extract to the cream cheese mixture while beating.
