Baked Eggs: Breakfast and Brunch in Minutes
I love eggs. In fact, I really love all breakfast-type foods. The problem for me is that it all is usually so involved. The first thing I want to do in the morning is not usually spend time flipping pancakes or stirring scrambled eggs and then moving on to dishes, dishes and more dishes.
Baked eggs take care of those problems. Simply grease the ramekins, plop in the eggs, push them in the oven and walk away and get ready for your day. When you come back, you’ll have perfectly cooked eggs and a delicious breakfast with less fuss, and popping ramekins in the dishwasher is so much easier than hand washing large skillets covered with cooked-on eggs.
This week I spent some time at Thermador, and one of the lovely dishes they showed us were these baked eggs made in their new steam and convection oven. They were wonderful hosts and even shared some fantastic kitchen secrets and becoming a pro home cook. Plus, I had the chance to hang out with Brooke and several other amazing food bloggers, like Diane from White on Rice Couple, who helped me find the light for this shot.
Baked Eggs
6 eggs
12 pieces Canadian bacon
6 tablespoons cream
fresh herbs
1/4 cup shredded cheddar cheese
black pepper
Preheat oven to 350 degrees with a small, shallow pan of water on the very bottom rack. Grease 6 ramekins with butter or oil. Line the bottom of each ramekin with two pieces of Canadian bacon each. Crack the eggs into the well in the center of the Canadian bacon. Pour one tablespoon of cream over each egg.
Place the ramekins in a pan and then onto the middle rack of the oven. Bake for 15-20 minutes until egg white is cooked but yolk is still runny. Remove from oven, top with a sprinkle of cheese and a dash of black pepper. Allow to cool for 5 minutes before serving.
Serves 6.
