Most of the days I cook or prep my meal’s during my daughter’s afternoon naptime or when she at a friend’s house for a playdate. This way I can really enjoy my time in the kitchen. Other days, when I don’t have quite as much time to cook, I reach into my proverbial bag for one of my simple and elegant meals like this Poached Salmon with Leeks. It is a snap to prepare right before dinner and always pleases the whole family. Best of all, this technique works well with many kinds of fish. I’ve substituted halibut and cod for the salmon and it is just as delicious. If you are in the mood for a healthy one-pot dinner that the whole family will love, this one is for you.
