Avocado with Salad Dressing
I am ashamed to admit to my California friends that I don’t think I even tasted an avocado until I was well into high school. My husband on the other hand compensated for my shortchanged childhood by regularly gorging himself on this favorite side dish/snack: a halved avocado whose pitted middle has been filled with salad dressing. He favored Wishbone as a kid, but in our house, we’ve taken to filling it with Asian ginger dressing. The kids love that it’s an “edible bowl” and I love it because it’s an easy, healthy snack as well as a great “afterthought” side dish — takes 30 seconds to prepare and two avocados divide up so tidily for a family of four.
