It’s a soup! It’s a dip!

I’ve discovered a trick that allows me to serve soup as a meal to my entire family — even though two members of that entire family hate the genre in general. My husband blended up the most delicious cuke-avocado soup last week, and at the last minute added some cooked shrimp. The kids love shrimp, so we reserved a few and served them on their plates with the soup masquerading as a dip. They weren’t exactly fooled, but they did manage to get a healthy dinner.

Chilled Avocado & Cucumber Soup with Shrimp

1 cucumber (peeled, seeded, and chopped)

1 cup buttermilk

A generous squeeze of lemon

1 tablespoon chopped scallions

1 avocado

Salt to taste

1 cup cooked shrimp

Blend all the ingredients except shrimp. Add shrimp at the end (or reserve a few for your kids) and chill as long as possible and up to one day.

 Its a soup! Its a dip!
