Baked Not Fried: Heart Shaped Doughnuts for Valentine’s
I happen to love Valentine’s Day. Any excuse for me to gussy up everything in pink and red and hearts and xo all over I’m for it. I was in Tar-jay for one of my many weekly trips and I saw this adorable heart shaped doughnut pan. I knew I had to pick it up. I’ve been wanting to try baked doughnuts for a while now and this was my perfect opportunity. I adapted the recipe from the back of the pan and they turned out light, and amazing and in just about 15 minutes we were eating fresh BAKED doughnuts.
Less Guilt Dessert: Diet Cream Soda Cupcakes!
I’ve been on a bit of a kick with this baking with diet soda thing. I know it is still no substitute for eating healthy, but at least it is a step in the right direction. Cream soda is my favorite soda flavor and I usually buy it once in a while as a treat. Since I love the smooth creamy flavor I thought it might pair well with some basic yellow cupcakes. To stick with the same method I used for the bundt cake I added diet cream soda to the batter in lieu of the oil, water and eggs. They didn’t rise quite like regular cupcakes do so I filled the muffin tins to the top and it worked out beautifully. The finished result was a batch of creamy yellow cupcakes that were a little chewier and denser than their fattier counterparts. I did go ahead and top them with regular buttercream frosting, but that didn’t worry me too much. These are still cupcakes after all!

I couldn’t help myself. I already had my X and O cookie cutters out for the pancakes so an affectionate X and O checkboard of blondies and brownies seemed like the very natural next step. I just used very basic brownie and blondie recipes to make these, but you can also feel free to use box mixes if you’d prefer. The fun of these really is in the assembly. They are handled quite a bit before being eaten so you don’t want to make anything too delicate. Here is how I will be saying “XOXO I love you” to my family this Valentine’s Day. How to Make Pancakes
Everyone — particularly those charged with the care and feeding of hungry kids — should be able to whip up a batch of pancakes from scratch. Packaged pancake mix usually contains little more than flour, sugar, and baking powder — making them yourself is almost as fast and easy, and you can’t make a much cheaper, or well-received, breakfast. Best of all, pancakes are completely customizable — if you want to flavor them, add grated lemon or orange zest or a teaspoon of flavored extract into the milk mixture. Of course, pancakes can always be studded with berries, banana slices, nuts-any additions you like, really.

With the school year more than halfway over, it’s easy to fall into a lunchtime rut with the old brown bag sandwiches. When I asked my kids whether they wanted peanut butter or tuna last week, they flung their heads back and whined, “ewwwww. neither.” Frankly, I don’t blame them.
